We use either Northern or German Red hardneck garlic in our dried products. We have found that using this type garlic results in a stronger garlic flavor and provides that sharpe garlicky spicy heat.
Our sliced garlic is processed by slicing the cloves to 3 mm thick then dried for 32 to 36 hours. 4 ounces of the dried sliced garlic is put into containers and sealed with heat shrink bands.
The dried granulated garlic either Northern or German Red hardneck garlic. It is then sliced and into dehydrators for 36 hours. Put through a wire sieve so that the final results is a course granulated grind. The 6 ounces of granulated garlic is put into containers then sealed.
As for the powdered dried garlic, again we use Northern or German Red type garlic. This sliced then dried for 36 hours, crushed then through a fine grind mill. 6 ounces of powdered garlic is placed into containers, then sealed.
